GLUTEN FREE AUTHOR - FAVORITE RECIPES



GLUTEN FREE FLUFFY TEA BISCUITS


2 Cups Flour  (I use PC GF Flour) Similar flours: King Arthur GF, and BetterBatter


1/4 Cup Shortening


4 Tsp. GF baking powder  (I prefer Fleischmann's GF Baking Powder)


2 Tbsp. Sugar


1 Tsp. Salt


1 Egg


1 Cup Milk (I use lactose free milk)


Method:
Mix together flour, shortening, baking powder, sugar, and salt with a pastry cutter until shortening is in pea sized bits.  Mix in egg and milk.  Mix together and let sit for 2-3 minutes.
Put a bit of flour on board and roll dough in it, until covered on all sides, then pat down with your hand but leave fairly thick  (Don't use a rolling pin, it takes out too much of the fluffiness).  
Cook in 390 Degree oven for 14 minutes.   (Or until your biscuits are golden brown on top).
